One of my favorite places to recharge and renew. It’s almost always quiet and the historic scenery and botanical beauty can’t be beat. Here are a few good places to hunt down in the vicinity once your stomach starts to growl.

Hunting down the best Croque Madame

A cafe mainstay, this hot satisfying inexpensive grilled ham sandwich comes with an egg or without (the Croque Monsieur). Croquer means to crunch.

Here’s a recipe:

5 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
3 1/2 ounces coarsely grated Gruyère cheese (1 1/3 cups)
8 slices firm white sandwich bread
4 teaspoons Dijon mustard
1/2 pound thinly sliced cooked ham
4 eggs

The sauce:
Melt 3 tablespoons butter in a heavy saucepan over moderately low heat, then whisk in flour and cook 1 minute. Add milk and continue stirring until thick. Add salt, pepper, nutmeg, and 1/3 cup cheese.

Make sandwiches:
Spread 1 1/2 tablespoons sauce evenly over each of 4 slices of bread, then sprinkle evenly with remaining cheese (1/4 cup per slice). Spread mustard evenly on remaining 4 bread slices and top with ham, dividing it evenly, then invert onto cheese-topped bread to form sandwiches.

Melt 1 tablespoon butter in a 12-inch nonstick skillet over moderately low heat, then cook sandwiches, turning over once, until golden. Remove from heat and transfer sandwiches to baking pan.

Top each sandwich with 1/3 cup sauce, spreading evenly. Broil sandwiches 4 to 5 inches from heat until sauce is bubbling and golden.

For the Madame, top each sandwich with a fried or poached egg and serve immediately.

Your quest for a good cup of filtered coffee is on. Try sipping at one of these new coffee houses that also serve up some mouthwatering accompaniments like beetroot salad, string wrapped gluten-free sandwiches or lemon pot de creme. Try the Broken Arm’s “club sandwich” with smoked salmon and cream of asparagus spread and a planche of oregano-flecked focaccia with tomatoes, capers, parsley, lard Colonata, and a healthy drizzling of fruity olive oil, dotted with fresh peas. ooh la la! Bottom line, a good cup of Joe in Paris can now be had. English usually works but if you’re timid just point to the Chemex on the counter or ask for a Cafe Filtre. Here are some hot recommendations:

Paris Cafe

Fact: it’s cheaper to stand at the bar, order your coffee and croissant and eat it standing. DO NOT take it to a table and sit down.

Fact: bread comes with most meals. Don’t ask for butter, it will be considered a tartine, a breakfast item.

Fact: food can be rich and filling. Don’t ask for a doggie bag. It’s okay to leave food on your plate.

Fact: Parisians have excellent manners. Always say “bonjour madame, monsier, mademoiselle” and “au revoir madame………” when coming in contact with your fellow man. Smiles not required.

Be forewarned: if you’re intending to sit out on the terraces of Paris’s cafes you could be enveloped in a cloud of second hand smoke. It looks sexy, it’s trendy with young and old and it’s not cool to ask someone to put out their cigarettes. Although a ban was passed 3 years ago, Parisians interpret the law to mean they can smoke outside and that translates to the little tables and chairs lined up on the sidewalks. At around $7 a pack, each puff is relished and enjoyed right down to the last quarter inch.

Cafes look the other way and even supply ashtrays. Cold weather brings heaters and plastic drop-down enclosures to the terraces so the smoke lingers even longer. Here are a few colorful cafes worth visiting. Go inside if you can’t take the fumes.

A spirit commonly referred to in historical literature as “la fée verte” (the green fairy), absinthe is derived from botanicals including the flowers and leaves of Artemisia absinthium (a.k.a. “grand wormwood”), together with green anise, sweet fennel, and other medicinal and culinary herbs.

In late 19th- and early 20th-century France it arose to become a popular drink particularly among Parisian artists and writers: Ernest Hemingway, Charles Baudelaire, Paul Verlaine, Arthur Rimbaud, Henri de Toulouse-Lautrec, Amedeo Modigliani, Vincent van Gogh, Oscar Wilde, Aleister Crowley and Alfred Jarry.

Banned in much of Europe and the United States in 1915 because of its reputation as a psychoactive drug, it has since been revived (1990) and now nearly 200 brands of absinthe are being produced. Here’s to ya! Sante!
